To make the most of your skills you will need to use higher level materials then the merchants in the cities can provide. You can do this by making alternative characters known in the MMO world as an "Alt" to take up these skills or you may have friends that can help gather for you. A guild can really come in handy in these situations so if you are in one ask if anyone is doing Butchering or Scavenging and if they will consider donating or trading you materials for completed potions.
Butchering will give main ingredients as well as upgraded soils and nutrients. You will need these soils and nutrients to grow happier healthier plants. These plants will make better potions. To train in the Butchering skill, the Butcher trainer will be nearby. To obtain butchering items slay animal type monsters like bears, rats, bats and spiders.
You can loot the corpses of these animals completely. Flies will begin to fly around the corpse and buzz. A knife icon will appear when you mouse over the corpse. Left click to target the body then right click to butcher it.
Scavenging will give you main ingredients as well as upgraded water items for both Alchemy and Cultivating. These better ingredients allow you to make larger stronger potions and healthier plants. To obtain Scavenging items slay human and humanoid creatures. a good rule of thumb here is "does it have or would it have pockets?" If the answer is yes, it is most likely the right type of creature. Once again you should be sure to loot everything off of the corpse before attempting to scavenge.

Rarity in WAR is displayed by the color of the name of the item. White is your basic common item, green is uncommon, blue is unusual, purple is rare. There may be more colors but these are the common ones you will see.
