As you all get to know that Priest are like Mages, to large scale, they can't take many hits, they wear robes and deal insane amounts of damage. The Priest class used to be harder to play, but the way the Burning Crusade expansion changed the game, Priests and other casters actually got powered up. It is now possible to kill monsters out in the world, other players in Player vs. Player, and still heal a group in a dungeon.
It is a good way to start picking. Do you want to play a Priest that does damage, or a Priest who heals? At most Priests who heal are always in high demand. Humans, Draenei and Dwarves make good healing Priests on Alliance side.
Over time, Draenei have the racial Gift of the Naaru, which is heal that doesn't cost any mana. This is nice to have in a dungeon when you're all out of mana. Draenei also have the spell Symbol of Hope, which recharges the whole group's mana.
Both humans and dwarves get Desperate Prayer, an instant-cast spell that restores your character to full health.
On the Horde side, the best healing Priest race is Undead, because of their Will of the Forsaken spell. Blood Elves and Trolls favor a damage Priest build, but you can heal with them, too.

Horde has two low-level dungeons that are hard for Alliance players to reach, like Ragefire Chasm and Wailing Caverns. You can start your Priest off running groups in these dungeons, and you will rake in both the quest experience and good items. You will also learn how to deal damage and heal in a group. Playing in a group is very different from playing solo, and if you want to learn to be a team player.

In part, the dungeons keep on coming, and they get more complicated and interesting. There's Uldaman, an ancient dwarven ruin, Zul'Farrak, a Troll city, and the Sunken Temple, where all classes have to go at some point. These instances cover the 40s, and help you reach level 50.

Likewise, you can do the quests that lead up to fighting Onyxia, the giant black dragon.
